The slight peppery taste that is felt in the back or the throat is a synonymous of quality and it comes from the antioxidants present, which disappears after a few seconds without leaving a lasting impression on the taste buds.
Virgin oils are, unlike regular oils, always made cold-pressed and extracted during the first pressing of olives without the use of heat or chemicals. Regular olive oil is made from a blend of processed oils.
Even though it has got a lower smoke point then other cooking oils, quality extra virgin oil like this one is still a good option for cooking. The main thing that happens when the oil is heated is that some of the flavour compounds will evaporate. That’s why is generally used as a salad dressing.
